Onions have long been one of consumers’ most popular vegetables.
Per capita consumption rose to 18.3 pounds in 2022, with among the highest household penetration numbers.
While domestic production is led by Washington, Texas, California, and Georgia, analysis shows Mexico has been growing market share in the U.S. by 135 percent since 2019, so that it represents nearly 24 percent of all U.S. volume in the spring of 2023.
